Chef Marco's culinary journey began in the dish pit of one of Portland's most iconic restaurants-Jake's Famous Crawfish. With determination, talent and an insatiable curiosity for food, Marco worked his way up the kitchen line, learning every station and honing his skills at high-end restaurants until he earned the title of Executive Chef. Nearly 30 years later, Marco has led some of Portland and Vancouver's most renowned kitchens with grace and humility while bringing excellence, creativity and precision to every plate. Now, as the proud owner of Cocina Nueva Vista, Chef Marco brings his passion for food to the community at farmers markets and private events through his mobile food trailer and full-service catering business. Whether he's preparing his wildly popular Mac & Cheese at a local market or curating an elegant wedding menu, Marco approaches each event with the same care and attention to detail that has defined his career.

For decades, he has generously cooked unforgettable meals for weddings, birthdays and family celebrations-not for recognition, but to make every gathering feel special.
